Our Story

Collar Brass Solution’s story starts back in the shadows of the Catskill Mountains in upstate NY in the mid 80’s when parachute pants and summer resort vacations were still a thing.  Owner Tom Gottschalk was cutting his teeth in the food service industry washing dishes, waiting tables, and peeling potatoes in the boarding houses of the emerald isle hamlet of East Durham.  A tiny town just south of Albany and 2.5 hours north of the Big apple.

For six years during his formidable years, his friends and family and he toiled in the many roles at the resorts in Greene County. Cleaning rooms, scraping pots, teaching shuffleboard, and serving families delicious meals that would shape fond memories forever.  This taught our founding owner the value of hard work and how to turn sweat into cash.

Fast forward to 1991, Tom finds himself employed again in hospitality services plus retail sales to pay for out of state tuition at Davenport University. Working as a busboy, houseman, waiter, and sales associate he learned many valuable lessons that could have only been picked up while working for large corporations.

After his stint working for two industry giants, our founder finished up his education and went to work as a Critical Care Paramedic, Medical Educator, and Software Entrepreneur until December 2019. Those experiences opened the door to the next chapter in his life.  A pivot that would turn out not to be retirement.

His new mission: To create a unique food truck business. One that would get awesome people working together making customers happy through their stomachs via a fleet of food trucks. So, after some extensive planning with trusted advisors, family and friends, in early fall of 2020 Collar Brass Solutions was established during the global COVID-19 pandemic. Which to those who know us, seems rather fitting and not a big surprise to them.
